Chicken Enchiladas - 5/25/2009

You need:
• 1 rotisserie chicken - shredded chicken (about 1 pound)
• 1 jar salsa
• 2 Cups shredded cheddar cheese
• 1 can of hole kernel corn
• 1 can enchilada sauce (red or green sauce)
• 1 pkg of small tortilla shells
• Shredded lettuce
• Black Olives
• Sour Cream

Instructions:
Preheat oven to 350 degrees. In a bowl mix 1/3 of the salsa, chicken, corn, and 1/2 of the cheese. Spoon mixture into tortillas and place in a 9X13 inch baking dish. Cover with enchilada sauce and sprinkle with cheese. Bake for 20-30 minutes or until cheese is melted and chicken is warm.

Serve with sour cream, lettuce, and olives
